Fresh bakers yeast, Greenhalgh's Craft Bakery fresh bakers years 1kg block

I was a bit wary of ordering fresh yeast on Amazon...but didn't need to be. the yeast arrived quickly and was brilliantly packaged in a box and in bubble wrap with an ice bag. I popped it in the fridge until the weekend. When I opened it it smelt yeasty ...I remember the texture id fresh yeast as being dry and crumbling,this wasn't,but it is compressed so that may be why ...it was more well ,it squeeked as the knife went through,it did crumble but wasn't what I expected in texture. I added it to the water and honey and left in a warm place for 15 mins but no foam appeared ,but on closer inspection it was bubbling so I decided to use it ...I was not disappointed it made a great loaf very well risen ,good crumb and held it's shape in the Tin ,and in the oven even though it was about 2" over the tin top ...I used the recommended amount on the packaging of 25g to 1000g strong organic bread flour ...great tasting bread ...just would like to know why the texture and no foam

Came packaged appropriately. Kept cold and protected. I baked bread straight away with great result. Very good quality product. Will definitely buy again. Strongly recommend

I recently had the pleasure of trying the Fresh Baker's Yeast from Greenhalgh's, and I must say, my baking experience has reached new heights! As an avid home baker, I was on the hunt for a quality yeast, and this product has truly exceeded my expectations.

The yeast was delivered quickly and so well packaged to keep it cool.. I cut the block into 25gm portions , each of which is enough to make, for instance, into 1 large loaf in a breadmaking machine basic recipe or three small baguettes tradionally made. My bread tastes great. a warning though it goes ballistic in a breadmaker on the dough only program in a bread maker , so watch it!Once cut up I wrapped each portion seperately in cling film, then in baking foil to stop it drying out and put the wrapped portions in a zip lock freezer bags ( date labeled) and placed in freezer. It has fozen well. Leave portion to defrost before activating with sugar and warm water. If you are unsure or new to using fresh yeast do look up on line how to handle it. It is easy to kill it and your bread wont rise! An added bonus for me is the fragrance of the yeast both in rising and in baking. Happy breadmaker here.
